Avocado and Cottage Cheese Bowl

If you’re looking for a quick, healthy, and filling breakfast that skips the sugar and bread, you’re in the right place. Today, I’ve got a super simple recipe for you: an Avocado and Cottage Cheese Bowl. It’s packed with good fats, protein, and vitamins to kickstart your day the right way. Plus, it’s really easy to make.

Ingredients:

         •       1 ripe avocado

        •       150g (5 oz) cottage cheese

        •       A handful of cherry tomatoes, halved

        •       A handful of rocket (arugula) or baby spinach leaves

        •       A sprinkle of seeds (such as pumpkin, sunflower, or chia seeds)

        •       Salt and freshly ground black pepper, to taste

        •       A drizzle of olive oil (optional)

        •       A squeeze of fresh lemon juice (optional)

 Instructions:

  • Halve the avocado and remove the stone. Scoop out the flesh and slice or cube it as you prefer.

  • Place the cottage cheese in a bowl

  • Add the sliced avocado and halved cherry tomatoes on top of the cottage cheese

  • Add a handful of rocket or baby spinach leav

  • Sprinkle a mix of your favorite seeds over the top for a bit of crun

  • Season with salt and freshly ground black pepper to taste. Add a drizzle of olive oil and a squeeze of lemon juice if

  • Gently mix, if preferred, or enjoy as layered.

  •  This dish combines creamy, nutrient-rich avocado with protein-packed cottage cheese, fresh vegetables, and seeds for added texture and nutrients. It’s a wonderful, quick, and no-cook breakfast option that starts your day off right without any added sugars or bread.
