 Garden Salad with Herby Quinoa

This dish is a celebration of fresh vegetables and herbs, paired with the nutty flavors of quinoa – a wonderful choice for a nourishing and easy-to-prepare lunch.

 Ingredients:

         •       Quinoa (75g, uncooked)

        •       Mixed salad leaves (80g)

        •       Cherry tomatoes (10, halved)

        •       Cucumber (half, sliced)

        •       Radishes (5, thinly sliced)

        •       Avocado (1, sliced)

        •       Fresh mixed herbs (e.g., parsley, coriander, mint, 20g, chopped)

        •       Lemon (juice of half)

        •       Olive oil (1 tbsp)

        •       Salt and pepper (to taste)

 Instruction

  • Rinse the quinoa under cold water. Cook according to package instructions, then let

  • In a large bowl, combine the mixed salad leaves, cherry tomatoes, cucumber, radishes, and avocado.

  • Once the quinoa is cool, stir through the chopped fresh herbs, lemon juice, olive oil, salt, and p

  • Mix the herby quinoa into the salad. Serve immediately or keep chilled until ready to eat.
